Copper River Sockeye: robust and rich in flavor
For more than 40 years now fresh Copper River salmon has been a seasonal celebration for both professional and home cooks alike.
With its superior quality and inherently rich characteristics it naturally lends itself to preparations both simple, luxurious, and innovative.
As the next generation of home cooks head to seafood counters around the country, we decided it was high time to reinvigorate the basics of fish cookery, and we are pleased to launch Simplicity Shines with Copper River Salmon.
As many fine chefs will attest, when an ingredient is of the highest quality, the cook, whether experienced, professional or novice, can feel confident in simplifying their approach.
With that in mind, we have created Simplicity Shines to feature Fresh Copper River salmon in season using simple straightforward cooking techniques and readily available ingredients.
By featuring the quick cooking methods of baking, pan roasting and grilling, and pairing those methods with fresh seasonal and affordable ingredients, we demonstrate that cooking fish can be creative, easy and fun!
By using simple techniques of baking, pan roasting or grilling, cooks can gain a better understanding of the process and become more confident cooking Copper River Salmon and experimenting with different flavors and ingredients.
Of course we may be biased, but what better fish to do this with than our beloved Copper River sockeye salmon?

The Methods:
Baked with Breadcrumbs
The Baking recipes call for coating salmon fillets with crumbs and baking in a 400 F oven. An easy hands-off approach that cooks the fish in the oven. The breadcrumb topping adds texture and crunch to the silky salmon.
Pan Roasted with Compound Butters
The Pan Roasting recipes start the fish in an ovenproof frying pan on top of the stove to sear the fish and then finishes the cooking process in that frying pan, in the oven. This method leaves the cook free to tackle another task. For serving, the pan roasted salmon is paired with easy to make compound butters which yields the luxury of a fancy sauce yet requires minimal effort.
Grilled with Herby Sauces
The Grilling recipes celebrate the naturally rich and robust Copper River salmon with a straightforward technique that can be adapted to type of grill at hand. The salmon is topped with a vinaigrette style sauce laced full of fresh herbs and robust savory ingredients that stand up to the fish.
